Our Pat LaFrieda Program For three generations, Pat LaFrieda Wholesale Meat Purveyors has served everyone from mom and pop shops to the newest hot spots to international hotel chains and renowned hospitality groups. Pat LaFrieda offers a full line of beef, veal, pork, lamb, poultry and wild game. LaFrieda signature customized blends of chopped beef is made using whole muscles, never trimmings. LaFrieda Meats is voluntarily inspected by the USDA, with a USDA agent on site every night ensuring that all the products meet the most stringent guidelines. No purveyor in the industry works to a higher standard of hygiene, cleanliness and safety.

BEEF

LaFrieda meats are hand selected from the best family farms from throughout the country to supply our Black Angus, Hereford or other breeds of premium beef. Our family owned farms include Diamond Ranch Farms in Kansas. One of our main processing plant is Creekstone Farms, a state of the art facility in the heart of the country. Creekstone was designed by Temple Grandin, PhD, a professor of Animal Science at Colorado State University who developed a method for the most humane way to process livestock. Less stressful situations for the animal results in better tasting meat, and we can attest that our beef is the best on the market. We carry all cuts of beef in choice, high choice and prime grades.

DRY AGED PROGRAM

Much of our 100% Black Angus Prime cuts (top 1% of fat marbling of all beef produced in the USA) and high Choice are aged in our specially designed aging rooms. The steaks age from 21-60 days or longer, and the rooms are filled with 5-6,000 steaks at a time, which is important for the promotion of good bacteria. The controlled atmosphere draws out moisture, thereby concentrating flavor. As the steaks age, the enzymes in the beef naturally tenderize the meat. The flavor of our aged steaks is unique and sought after by the greatest steak connoisseurs in the world.

AMERICAN WAGYU

All Mishima Reserve beef comes from full-blood Black Wagyu bulls, the Japanese breed that elevates beef to a luxury, crossed predominantly with Angus cows. Born and bred in America, Mishima cattle begin life in the pasture. They work with a network of family ranches and manage every aspect of the cattle’s lives, from breeding to feeding to care, to ensure the result on your plate is consistently and incredibly delicious.

Mishima builds on the incredible genetic potential of their wagyu bloodlines with an uncompromising feeding and breeding program that brings out the very best in the cattle’s potential.

CHOPPED BEEF PROGRAM

Pat LaFrieda has built a reputation for making the best hamburgers on the market. All of our chopped beef blends are made from 100% whole muscles from domestically raised beef. We never use trimmings or “pink slime” in our blends. The meat is chopped at very cold temperatures, which keeps the meat coarse and prevents it from getting overworked. Our hamburger patties, available in any size from 2-8oz or 10oz, are formed by a low pressure machine with a noodle textured fill system. This ensures a loosely packed patty that is juicier and more flavorful than a hand packed patty. One taste of our burgers and you will see why they are legendary. PORK HAMPSHIRE PORK

Pat LaFrieda Meats has an extensive pork program that includes a number of all-natural heritage breeds. We are particularly proud of our All Natural Hampshire Pork from American Homestead. A Pat LaFrieda exclusive and a heritage breed, Hampshire pork is hormone and antibiotic free and fed an all-vegetarian diet of non-GMO corn, soy and foraged grasses. They mature and develop naturally in a social indoor/outdoor environment and are never crated. The result is tender meat with a rich and complex flavor profile that is sought after by the finest chefs in the world.


BERKSHIRE PORK

We bring in the best premium 100 % Berkshire Pork from Eden Farms, a coalition of independent family owned farms in the Midwest. They are all committed to raising Berkshire pigs using a strict code of humane and responsible animal husbandry. Raised with room to roam and never fed antibiotics or hormones, we haven’t tasted better pork.
We also carry a full line of pork from Indiana and Hatfield.

LAMB

We provide a variety of different lamb options, but fresh Colorado Lamb is our passion and our specialty. These lambs are raised in Steamboat Springs and fed an all-natural, vegetarian diet. Lambs are finished in a low-density, free-choice lot that allows at-will movement from indoor to outdoor feeders. The lamb is rich in marbling and sweet in flavor, and we find that they tend to be larger than imported lamb while still retaining their tender texture.

VENISON

We bring in farmed Cervena Venison fresh from New Zealand. Cervena venison is held to strict criteria. They must be three years of age or under, raised with no growth hormones or steroids. They must be free to roam and graze freely in natural condition on pasture, fed only on grass. Their feed is supplemented in winter months with hay and silage. The result is the most tender and delicious venison that we have tasted. Depending on the time of year we may have fresh or frozen venison available.

We bring in fresh all natural rabbit from Whiskey Hill Farm, an Amish family farm in the Hudson Valley.

POULTRY

We offer a full poultry line to fit any chef’s needs. We are proud to offer a full line of Bell & Evans chicken. Bell & Evans has the county’s best air-chilled poultry program, which ensures no retained or added water and results in tender, flavorful birds. Humanely raised in low stress environments, they are never given antibiotics or hormones, and they are fed an all vegetarian diet. We receive the chicken fresh every night from Pennsylvania for deliveries to our restaurants the next day.

We carry a wide selection of game birds from Eberly Poultry Farms in Pennsylvania, specializing in organic and specialty poultry. All birds are raised in enhanced barns with ability to free range in a natural environment. Our poultry never features any added ingredients, preservatives, solutions or injections. Manchester Farms in South Carolina provides with jumbo quail that is superior to any other quail on the market.
